Courgette burgers are a very good and nutritious dish, perfect if you have decided to stop eating meat or simply if you want to try something tasty and simple at the same time, without eating animal proteins for once.
Preparing them takes very little time. You can choose to eat courgette burgers as a single course or as a main course. For a single course, you should combine the burgers with other dishes such as chips, or a nice salad.
Courgette burgers can be eaten as they are, that is without bread, or you can accompany them with the classic burgers. You can put your favorite sauces in them, as they delicious even with eggplant oils.
The recipe is very simple to prepare. Below I will explain how to make them but first, here are the ingredients you will need!
- 3 medium-sized courgettes;
- 1 medium potato;
- Spices to taste;
- A drizzle of oil.
Cut your shallots into thin slices.
Put the peeled potato into the water and let it cook well. Cut the potatoes in pieces to speed up the process.
Remove the ends of the three courgettes you need, then wash them well under running water and cut them into cubes. Transfer the cubes into a large pan with a drizzle of oil and leave to cook.
After two or three minutes, add the shallot, salt and all the spices of your choosing. Stir well and leave to cook for about twenty minutes or at least until the courgettes are well cooked.
Check that the potato is cooked. To do this, just put the teeth of the fork in it. If they go in easily, it means it’s ready. Drain it.
Take the courgette cubes and potato and put them together in a bowl. Using a fork or potato masher, reduce everything to a paste. When you have obtained a nice homogeneous mixture, add the chickpea flour and a handful of breadcrumbs. The goal is to have a mixture that is easy to shape.
Wet your hands slightly and form the burgers. Pass them through the breadcrumbs and gently flatten them.
In the meantime, begin to preheat the oven, prepare a drip pan with baking paper on top, place your zucchini burgers on top and sprinkle with oil. Let them cook in a ventilated oven for about twenty minutes.
Tips and tricks
I recommend buying dark courgettes. Make sure they are fresh, so they do not contain any vegetation water. Do not buy them too large, otherwise they may taste bitter.
An alternative is to cook these fried burgers in a pan with a little sunflower oil or peanut oil.
You can serve your courgette burger in a classic sesame seed sandwich with sauces of your choice. It goes very well with ketchup or a sweet-and-sour sauce. Or you can eat it as it is with a side dish, like a Swiss meal.
